Inspired by “Avocado: A Global History” by Jeff Miller, we examine the agricultural, commercial, and cultural journey of the avocado. We’ll discuss its symbolism across different societies, its impact on the economy, the environment, and modern food trends.
The session also opens the door for attendees to explore the diverse ways avocados are used in global kitchens, from traditional recipes to healthy and delicious contemporary innovations.

A professional chef with extensive experience in the culinary arts, Cristobal has worked at some of the world’s most renowned restaurants, including the famous Noma in Copenhagen and Marcus Wareing at The Berkeley Hotel in London, both known for their high level of innovation and excellence in cooking.
He has also served as a chef and instructor at the Skyeva Culinary Arts Academy, where he played a key role in training emerging chefs and overseeing the preparation of exquisite dishes for guests.
Cristobal is distinguished by his meticulous approach, deep passion for modern European cuisine techniques, and his ability to blend classic flavors with contemporary touches in his culinary creations.
